In your profile_view_body.tpl file, the only field that follows Interst is Birthday:
The Proflie variables should probably be assigned in your usercp_viewprofile.php file, but I can't find them. If you installed Neil's Birthday MOD, then some of the MOD code is missing, which would explain the missing text in your Profile page...

Yeah I tried to install the birthday mod about a week ago (think it was Neil's one, can't really remember) but couldn't get it to work properly so I did an em restore backup and then manually reversed some of the other commands. I guess I did something wrong though as them two dots are there that shouldn't be there, my guess is that there’s properly more code in other files that shouldn't be there too, just I can’t see it.
I’m going to try and reinstall it this mod again though, I’ll just try Neil’s birthday mod. The birthday mod box took up a lot of room on the page before but I’ve managed to remove the login box from the bottom so it won’t look as bad this time I reckon |

I'm not sure why Interests: is not inline with Occupation: though |

The reason why it didn't line up is because there was a missing after {L_INTERESTS}: in the profile_view_body.tpl file. I re-added that. Also, there was a new syntax error introduced. The code was missing a </tr> row tag for the table. I corrected that too, so all should be displaying prooperly now...
