I don't know what OS you have, I have W2K so I will give instruction for that OS but it should be close to what XP would have.
Right click My Computer > Manage > Under Computer Management go to Services and Applications (the last one in the list on my PC). Click the + sign and then click Services. Double click Automatic Updates and disable in the window that pops up. Or you can set it Manual.
