A moist and delicious oven Baked Chicken dipped in Spicy Buttermilk and breaded. No frying in this recipe but the results are a crispy, spicy coating with juicy, tender chicken on the inside.  Serve with your favorite sauce!

Ingredients
8 slices white bread
 

1 cup buttermilk
1 teaspoon hot sauce
Salt and pepper
3/4 cup grated Parmesan cheese
1 teaspoon dried thyme
4 pounds chicken pieces or you can use all breast cut into chunks or whatever pleases you
Directions

Preheat oven to 400 degrees F.
Use canola or peanut oil to grease a baking sheet.
In a food processor, pulse bread until it turns into coarse crumbs.
 

In a large bowl, stir together buttermilk, hot sauce, 3/4 teaspoon salt, and 1/2 teaspoon pepper.
 

In a separate bowl, mix breadcrumbs, Parmesan, thyme, and 1/8 teaspoon pepper. Place into a zipper bag
 

Place chicken in the buttermilk mixture, turning to coat evenly. Working with one piece at a time, remove chicken from liquid, letting excess drip back into bowl.
Place each piece into the zipper bag containing the breadcrumb mixture and shake to coat evenly.
Place coated chicken pieces on prepared baking sheet. Do not crowd chicken and leave enough room for heat to brown around chicken completely.
 

Bake until chicken is golden brown, about 30 – 35 minutes.

That sounds wonderful.  I'm on the quick and lazy side, I buy Shake and Bake, coat the chicken and bake.  I'm sure it's not as good as your method though.

I'll let u know when I try it!  Very dangerously cold here.  Sposed be minus forty wind chill when I go to work in morn.  Let's hope the car starts

Good grief, mojo, that's cold!  I too hope the car starts and you don't have to call a cab.  It was 27 here this morning.  Suppose to be a bit lower tomorrow morning.

The car started!   Minus 16 on my dash, wind chills 45 below.  It's a tad nippy!   27 is cold in your neck of ypthe woods.  Stay warm!
